Delicious Apple Cake

 

Method:


Preheat oven to 180 degrees Celsius. In a medium-sized bowl, whisk soy milk with the apple cider vinegar and set aside for five to ten minutes so it lightly curdles.

In a medium-sized mixing bowl sift the all-purpose flour, baking powder and baking soda and set aside.

In a large mixing bowl, mix the remaining ingredients together, and add the soymilk/apple cider mixture. Add the flour mixture to the mixing bowl containing the wet ingredients and mix until combined.

Pour mixture into a well-oiled 20 cm round cake pan. Add sliced apple, shredded coconut and brown sugar to the top.

Bake for about 25 minutes or until an inserted toothpick comes out clean.

  • 6 Tbsp soy milk
  • 1 tsp apple cider vinegar
  • 1 1/4 C all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 C apple sauce
  • 1/2 tsp sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1 Tbsp brown rice syrup
