Ginger Sesame Mashed Potatoes

Method:

Serves 8
30 minutes or less

Sesame oil lends flavour to a simple potato mash. 

Bring potatoes, ginger, salt and enough water to cover the potatoes by 2.5 cm to a boil in a large saucepan. Reduce heat to medium-low, and simmer 20-25 minutes, or until potatoes are tender.

Drain and discard ginger. Return the potatoes to the pot and mash with remaining ingredients over medium-low heat for 3-5 minutes or until most of liquid has evaporated.

When serving, sprinkle with sesame seeds and green onions, to garnish

  • 4 C of yellow potatoes, peeled and quartered
  • 1 2.5cm piece of fresh ginger, peeled
  • ½ tsp salt
  • ¼ C plain soy milk
  • 1 Tbsp soy margarine
  • 1 tsp pure sesame oil
  • 1 pinch nutmeg
  • 1 Tbsp sesame seeds (to garnish)
  • 1 green onion, finely chopped (to garnish)
