A versatile food made from soy beans that comes in a variety of textures. It’s high in protein, low in fat and a great addition to stir-fries, curries and wraps. You'll find marinated tofu, silken tofu and tofu blocks in the supermarket. You can even find more interesting varieties at Asian supermarkets. Here’s what you need to know to be a tofu-pro:
- Firm tofu is used in savoury dishes and is often marinated in soy sauce, ginger, garlic, chilli, and fried.
- Silken tofu is very soft and smooth. This can be used in baking and desserts.
- Smoked tofu is dense and lightly smoked. Perfect for salads!
- Fried tofu is often found as triangles and is ready-cooked with a chewy texture. Add to stir fries and Thai curries.
- Tofu puffs are also ready-fried, they are light and puffy – perfect for fragrant noodle soups and Malaysian cooking.
- Marinated tofu is delicious. Use in Asian dishes – or use your imagination!
Tempeh is made from fermented soy beans and is similar to tofu, but with a ‘meatier’ taste. Perfect on a burger or in a salad as tempeh ‘bacon.’
TVP (textured vegetable protein) is available in the bulk bins section of supermarkets, health food shops, and Asian and Indian stores. It's a mince-like form of protein with a chewy texture.
