Spring Rolls

Method:

Rolls can be served as whole rolls, cut in half or even cut in bite size pieces, like cut sushi. The garlic soy dipping sauce recipe will make about 1/2 cup dip. You can also use it as a fantastic marinade as well!

Spring Rolls

Fill a large bowl with warm water. Quickly dip each rice paper in warm water for about 2-3 seconds.

Place wet rice paper on a clean work surface.

Make sure rice paper is completely hydrated and softened before rolling.

Lay out the vegetables on rice paper and then roll.

Serve with garlic soy dipping sauce within 2 hours.

 

Garlic Soy Dipping Sauce

Mix all sauce ingredients together, making sure sugar dissolves.

Add slices of chili on top for garnish and extra spice.

Ingredients:

For the spring rolls

  • 8 sheets rice paper
  • 10 leaves fresh lettuce or leafy greens
  • bunch fresh Vietnamese herbs
  • 1 C julienne vegetables (bell peppers, carrots, celery, zucchini, cucumbers)
  • 1 C warm water

 

For the garlic soy dipping sauce

  • clove garlic, crushed or minced
  • 1 Thai chilli, crushed
  • Tbsp lime juice
  • Tbsp sugar
  • tsp rice vinegar
  • 1⁄4 soy sauce
  • 1/8 C water
