Simple Thai Pasta Salad

 

Method


Cook noodles according to instructions. Drain and toss immediately with coconut milk to prevent sticking. Add the cabbage, spring onion, peanuts, soy sauce, lime juice, garlic powder, lemon peel, ginger and chilli powder. Season with salt and mix thoroughly. Serve either hot or cold. 

Ingredients: 

  • 100 g rice vermicelli
  • 1/4 C coconut milk
  • 1 C red cabbage, chopped
  • 1/4 C spring onions, chopped
  • 1/4 C roasted peanuts, chopped
  • 1 Tbsp soy sauce
  • 1/4 C lime juice
  • 1/4 tsp garlic powder
  • 1/4 tsp lemon peel
  • 1/4 tsp ground ginger
  • 1/4 tsp red chilli powder
  • 1/4 tsp salt
