Scrambled Tofu

 

Method:

In a large frying pan, sauté the onion in oil for a few minutes then add the mushrooms and capsicum. In a medium bowl, mash the tofu, leaving some small chunks. When the vegetables are soft, add the tofu and spices. Mix well and cook until the tofu begins to brown.

Serve immediately on toast topped with fresh parsley.

  • 1 onion, chopped
  • 4 mushrooms, sliced
  • 1⁄2 red capsicum, chopped
  • 450firm tofu
  • Tbsp nutritional yeast
  • 1⁄2 tsp basil
  • 1⁄2 tsp oregano
  • tsp parsley
  • 1⁄4 tsp turmeric
  • 1⁄4 tsp black pepper
  • 1⁄2 tsp salt 
  • 1 vegetable oil
