Quick Chilled Cucumber Soup

 

Method:


In a blender or food processor, combine cucumber, pineapple, basil and mint leaves. Blend until smooth.

Chill thoroughly before serving. Garnish with cucumber slices and dill. 

Ingredients: 

  • 3 medium cucumbers, peeled, seeded and coarsely chopped (plus a few slices for garnish)
  • 1/2 fresh pineapple, peeled, cored and coarsely chopped
  • 6 large fresh basil leaves
  • 6 large fresh mint leaves
  • Dill, for garnish
