Quick Chilled Cucumber Soup
In a blender or food processor, combine cucumber, pineapple, basil and mint leaves. Blend until smooth.
Chill thoroughly before serving. Garnish with cucumber slices and dill.
- 3 medium cucumbers, peeled, seeded and coarsely chopped (plus a few slices for garnish)
- 1/2 fresh pineapple, peeled, cored and coarsely chopped
- 6 large fresh basil leaves
- 6 large fresh mint leaves
- Dill, for garnish
