New York Style Cheesecake

 

Method:


Mix biscuits and melted margarine together and then press firmly into the well-greased base of a springform tin.

Gently heat berries and sugar in a covered pot. Whip the cream cheese before adding to berry sugar mix.

In a bowl, combine flour and baking powder before adding fruit juice. Stir until smooth.

Once berries start to boil add to flour mix, stirring constantly. On medium heat, return ingredients to pot and stir until mixture bubbles and thickens. Pour into prepared base. Put into the fridge until chilled.

Remove from tin and serve. 

 

Ingredients: 

  • 3 Tbsp margarine
  • 1 packet animal-friendly biscuits, crushed
  • 250g soy cream cheese
  • 4 C mixed berries
  • 1/4 C sugar
  • 1/4 C fruit juice
  • 4 Tbsp flour
  • 1 tsp baking powder
