Chilled Mango Chipotle Soup

 

Method:


Purée all ingredients together in a blender or food processor until smooth and creamy. Season to taste.

Serve cold with a dash of coconut/soy yoghurt and garnish with diced cucumber and red pepper.

Ingredients: 

  • 2 mangos
  • Juice from 1 lime
  • 1/2 tsp ginger powder
  • Salt and pepper, to taste
  • 1 tsp chipotle powder
  • 2 C vegetable broth
  • 1/4 C cucumber, diced
  • 1/4 C red pepper, diced
  • Dallop of coconut/soy yoghurt
