Caribbean Salad

Method


To make mayonnaise, combine all the ingredients in a food processor or blender and process for 1-2 mins. Adjust seasonings to taste. Chill before serving. Can be refrigerated for 1 week.

Chop the peppers and celery. Combine all the ingredients and serve.

Ingredients: 
  • 1/2 green pepper

  • 1/2 red pepper

  • 4 sticks celery

  • 1 can pineapple chunks, drained

  • 4 Tbsp coarsely chopped walnuts

  • 4-6 Tbsp vegan mayonnaise

  • A squeeze of lemon juice¬†

Vegan mayonnaise

  • 300g silken tofu
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1/2 tsp mustard powder
  • 1 Tbsp lemon juice
  • 1 Tbsp white wine vinegar
