Black Bean Burritos

 

Method:


Mix one stock cube with one cup of warm water before adding the soya mince. Leave to soak.

Heat oil in a pan and fry the garlic, capsicum and red onion until translucent. Add mince and heat through.

Add tomatoes, black beans, chilli, cumin and season with salt and pepper and the second stock cube. Leave to simmer for 20-30 minutes. You can add more chilli, if prefered.

Heat tortillas according to instructions.

Pile a few spoonfuls of the mince mixture into the middle of the tortilla and add cheese, sour cream, jalapenos , coriander and avocado. Fold and tightly roll up and enjoy!

  • 2 vegetable stock cubes
  • Packet of vegan mince 
  • Olive oil
  • 2 small red onions, chopped
  • 3 garlic cloves, minced
  • 2 red capsicum, sliced
  • Can of tomatoes
  • Can of black beans 
  • 1 tsp chilli powder 
  • 1 tsp cumin powder
  • Salt and pepper

  • 8 flour tortillas

  • Immitation sour cream
  • Dairy-free cheese, grated
  • Jalapenos
  • Avocado
  • Coriander, roughly chopped
