Basil, Avocado & Asparagus Salad

 

Method


Steam asparagus for 5 minutes until tender.

Place asparagus, tomatoes, avocado and basil in a large bowl

Stir in olive oil, lemon juice and mustard.

Season with salt and pepper.

Ingredients: 

  • 1 bunch asparagus, trimmed and halved
  • 1 C grape tomatoes, halved
  • 1 ripe avocado, cut into cubes
  • 1 C basil leaves, chopped
  • 1/4 C olive oil
  • 2 tsp lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp sea salt
  • 1/2 tsp pepper
