Aloo Gobi

 

Method:


Sauté onion in oil until tender. Add tomatoes and one tsp of curry powder and cook until the tomatoes have pulped into a sauce.

Add cauliflower and potatoes and simmer over a low heat with lid on for 40-50 minutes, stirring occasionally.

While cooking, continue to add more curry until you have acquired the desired flavour. 

Serve with rice or Naan

  • 1 Tbsp oil
  • 1 small onion, chopped
  • 2 tomatoes, chopped
  • 1-2 tsp curry powder
  • 1 cauliflower, diced
  • 4 potatoes, diced
  • Salt to taste
