I love trumpeting our victories and momentous occasions. The feel-good factor in knowing we are making a significant difference to the lives of animals is priceless. Last week SAFE had multiple landmark victories that will notably advance the animal rights movement in New Zealand. By my reckoning, it was SAFE’s greatest week of achievements in our 75-year history. Momentous and historic! Amazing! So what happened?

SAFE launched a world-class humane education resource focused on animal rights. A copy was sent to every secondary school in the country in an effort to incorporate animal rights issues into the curriculum. SAFE’s education officer Nichola Kriek and Dr Philip Armstrong, who co-authored the 192-page resource, must be highly commended for such brilliant work. This resource is already being acclaimed as a valuable asset by teachers around the country within its first week of being released. Schools can finally debate the value of animal rights and encourage our youth to critically evaluate the way we treat animals.

SAFE also successfully convinced Auckland City Council to ban rodeos in a landmark victory. We applaud the Auckland City Council for taking animal welfare issues seriously. We also received confirmation that Napier City Council will close Marineland as an entertainment facility once the last dolphin dies. SAFE has been calling for a ban on captive marine animals at Marineland for over 20 years so again, we rejoice.

Sadly, all my triumphant proclaiming ends here as I mourn the loss of a fellow animal rights champion, vegan and passionate SAFE supporter. Tragically Barry Bain died last week. Barry, 43, had a heart filled with admiration and respect for all life. He quietly championed his ethical beliefs and volunteered for SAFE on many occasions. SAFE extends sincere condolences and comfort to Barry’s family and friends.

Even amongst the victories we can lose the greatest of champions. Barry, we stand proudly at your side, wherever you may be. Thanks mate.

Anthony Terry
Director

VEGAN BERRY DONUT CUPCAKES

1 1/2 cups plain flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground nutmeg
1/2 tsp salt
1 cup soymilk
1 tsp apple cider vinegar
2 tbsp cornflour
1/3 cup canola oil
3/4 cup + 2 tbsp sugar
2 tsp vanilla
1/3 cup berry jam
2 tbsp icing sugar

Preheat oven to 350F. Line a cupcake tin with paper cases. In a large mixing bowl sift together plain flour, baking powder, baking soda, nutmeg and salt. Create a well in the centre of the flour mixture. Combine the soymilk, vinegar and cornflour and stir until smooth, then add to the flour mixture. Add the oil, sugar and vanilla and mix well.

Fill the cases three-quarters full with batter. Place a heaped spoonful of jam into the centre of each cupcake, being careful not to overfill. The jam will sink into the bottom of the cupcake during baking. Bake cupcakes for 20-25 minutes. Cool completely on a wire rack, and then allow to set uncovered overnight in a cool and dry place. This will make the tops slightly crispy, like a donut crust. Using a sifter, sprinkle with icing sugar and serve with coffee. Presto!
